The concept of cuisine that we promote at The Medina is ‘Mediterranean cuisine moderne’, where we select the regional classical dishes, which we then adapt, cook and present them in a modern and healthier style which is demanded by today’s healthy eating lifestyle. The menu that our executive chef James Attard and his brigade have devised is a testament to this concept.
